Chocolate with Salted Caramel

I believe that this now officially means that I am not on vacation anymore, because I have been baking up a storm! The cranberry walnut muffins are delicious, and after being on my trip I’ve really been craving espresso drinks and baked goods in the mornings. I know, just like California, so what am I talking about?!

Although I had totally intended on making a cupcake version of a s’more this week, salted caramel happened instead. These totally intense devil’s food cupcakes were filled with a soft salted caramel, topped with chocolate buttercream, drizzled with more caramel, and sprinkled with a tiny bit of sea salt. A serious sugar bomb, to say the least.

These were for the birthday of the dear Pete W. Can you believe that this video of him cutting his hair has been viewed over 18,000 times? Pete, I knew you were a popular guy, but seriously, that’s out of control! Despite the fact that he has a video of himself having a haircut on YouTube, Pete is a great organizer, fellow Midwesterner, and an awesome friend. Here’s to many more happy birthdays!

Next up – no less than four baking opportunities in two days: two competing holiday parties on Friday, brunch on Saturday, and a dinner party on Saturday night. I think I’m going to need to fast few a few days afterward.

  4. These seem simultaneously simple and sophisticated. Cupcakes are playful but the salted caramel with dark chocolate makes them a bit x-rated. Now I’m thinking of scrapping my valentine’s chocolate dessert plan for these instead.
