Blue, Gold, and Sparkly

Sal & Levi just registered as domestic partners (congrats!!!) and these cupcakes were for their wedding party. The assignment was a bit daunting. Match a blue sequined dress with gold stars (the easy part), and make them vegan, gluten free, with vanilla icing and half chocolate, half chocolate orange (uh, the difficult part!).

I have to admit, this is my first gluten-free cupcake, and up until this point, I had been pretty against it. I found a recipe that used a combination of flours (like white rice and quinoa flour – who knew such a thing existed?), and the baked up nicely, looking just like gluten-y mini cakes.  I made an extra couple so I could taste how the cake turned out, and they were pretty delicious. I’ll have to do some experimenting to see if the recipe translates into doing a cake (as opposed to cupcakes), and try some different flavors, but overall I was quite pleased with the results.

The gold stars are made out of sugar, and there were small and large stars to denote which cupcakes were which flavor. You can see a photo of the big stars here. The color of the blue makes me think of starfish, and I like that, though you can’t really see the sparkly-ness so well in the photo.
